One thing I have noticed is that when I eat according to Eat To Live principles, my back doesn't hurt. That was a very surprising and unexpected positive side-effect of this diet. My back had ached ever since Samantha was a new baby (she is five and a half, now). The only other solution for that back pain that I've found is to sleep on the floor rather than on a mattress. That is the solution I relied on for a long time, but I started to miss sleeping in a real cozy warm bed. And since we have moved to a new apartment where the bedrooms have wood floors rather than carpet, sleeping on the floor felt too hard. So I am very happy that I can sleep in a bed, now, and still not have back pain.
So you guys are in a bed now?? I'm very excited for you!
ReplyDeleteI'm so glad you've found a solution to the back pain. These recipes look sooo good. I've perused the Moosewood Cookbooks in the bookstore a few times. I think I'm going to have to try buy one now.
The salad dressings look great, but I can't do soy now. Have you tried any great dressings that don't have tofu or soy sauce in them? (Or dairy, or sugar, or honey, or gluten, etc., etc., etc.?) Even my really yummy dairy-free ranch dressing has soy in it, and I'm lost without that one.
The pics of food are beautiful. Your green smoothies turn out a much nicer color than mine (mine are either green or some strange shade of greenish-brown, but they still taste okay). Here's my latest one:
Kale (this is my new favorite green; it's less bitter than spinach, but I've used spinach and it's still okay)
Banana
Berries (usually frozen from TJ) or apple (don't have to peel it if you have a VitaMix)
Almond Milk
Couple spoonfuls goat yogurt
If you don't do cow or goat dairy, leave out the yogurt. If you have to watch your fruit intake (I do), you can replace some of the fruit with stevia. And adding ice makes it even better. Enjoy!
